Deeply rooted in West Africa, fonio has been cultivated for generations on smallholder farms, but is now taking on a wider role as a gluten-free alternative in baked products across North America and Europe. Its light, nutty flavor profile, paired with more protein than rice or cassava flour, blends a real story with real taste and health benefits your customers will love.

With 7–9% protein, fonio flour adds more nutrition to a blend than white rice flour (about 6%) or cassava flour (1–3%).
In our baking trials, fonio contributed a light, slightly nutty character to bread, cake, and patisserie. Tasters rated fonio baguettes at about 80% for flavor, aroma, shape, and texture.
Fonio is a gluten-free grain with meaningful protein content, suitable for gluten-free lines or to add nutrition to a multigrain loaf. In our madeleine trials, 50/50 blends of fonio with corn or manioc received positive feedback on flavor.
Fonio has been cultivated in West Africa for generations, often in regions where other grains do not grow well. Our flour is Fairtrade certified and fully traceable, supporting sustainability and positive impact for farming communities.
